Chicken Bacon Ranch Frittata

Happy 2014! I am so thankful that it has been one full year since deciding to purchase the URL and have been able to share all my recipes, pictures, and words with you in this past year ๐Ÿ™‚ So happy and full of feelings. I will try to stop being a sap now.

This holiday season seemed to be the most crazy and hectic I have ever had. Maybe its because I’m older, maybe because I have this new job that causes me to travel during the week, or maybe its just a combination of a lot of things but JEEZE am I glad they are over! Don’t get me wrong,ย I love the holidays, really truly, but I need some normalcy in my life. I miss my routine and due to this I have been SUCH a slacker at the gym (and byย at the gym I actually meanย not at the gym,ย if ya know what I’m sayin’)

The one thing that has been a constant over the past month is eggs (mainly because its been too cold to go grocery shopping) Seriously. I get farm fresh eggs from a sweet woman I found on Craigslist and they are the best thing. I eat eggs for at least one meal a day… and when I’m lazy sometimes I eat them twice. I have been doing this for about a year now and am still not sick of them because you can make them so many ways! Plus yolks from pastured chickens are just about the greatest thing you can eat, in my opinion. Super duper good for you and full of things your bod needs!

This frittata is based off my favorite kind of pizza from back when I ate pizza… It’s weird to think that in college I ate pizza 5-6x a week and in the past year I have had maybe 3 slices total? The best part about this recipe is that you can literally throwย anything into this and it will turn out awesome. Well, maybe not anything because cookies or cupcakes would be pretty gross in this… and nuts. and fruit. Well, anything meat/veggie related would work great! Chicken Bacon Ranch Frittata

  • 1 small Onion, chopped
  • 1 Chicken breast, cooked and cubed or shredded
  • 6-8 slices Bacon, cooked and chopped
  • 8 large Eggs
  • 1/4 c full-fat Coconut milk
  • 1 tbsp Coconut oil
  • 2 tbsp Tessemae’s Zesty Ranch OR 2 tbsp Coconut oil plus 1/2 tsp Garlic, minced and 1/2 scallion, minced and a small squeeze of lemon juice
  • 1 medium Tomato, thinly sliced
  • 1/4 tsp Garlic powder
  • 1/2 tsp Sea salt
  • freshly cracked Pepper to taste


  1. Preheat oven to 400 degrees
  2. In a 10 inch nonstick or cast iron skillet, heat coconut oil over medium heat until shimmering
  3. Add onion and saute until translucent, about 3-4 minutes
  4. While onions cook, whisk eggs, coconut milk, and salt and pepper in a medium bowl
  5. Add chicken and some or all the bacon (can save some for the top) to the skillet
  6. Pour the ranch over the top, stir to combine
  7. Spread the mixture evenly across the skillet and pour the eggs over the top
  8. Place tomato slices evenly over the top
  9. Sprinkle on the garlic powder and more chopped bacon if you desire
  10. Let cook for 3-4 minutes or until the edges are starting to set up and pull away from the edge of the skillet
  11. Transfer to oven and bake for 10-12 minutes, check doneness with a butter knife, if you make a cut and see runny eggs bake for another couple minutes
  12. Let cool 5 minutes and use a knife to release the edges, slide onto serving plate and slice into 6 portions
  13. Keeps well in the fridge for 3-4 days and reheats nicely
  14. Enjoy!

    Hi Rachel! Just thought to swing by your blog to say “Hi!” since I’ve been following your IG in the last few days. ๐Ÿ™‚ This recipe looks beautiful (love that tomato) and I’m sure it tastes delicious as well. I’m bookmarking this base recipe for making fritatta in the future. I love eggs but my body hasn’t been loving it that much. As I’m starting my first Whole30, I’m a bit concerned about consuming more eggs. In the past when I eat more than 1 egg a day, I get very bloated and gassy…. (sorry if it’s TMI). Guess I should look it up on the Whole30 forum to see how I can go around eating eggs.

      Josie, Thanks for stopping by! If you are having issues with eggs I would search for more information on the Auto Immune protocol and seeing what the experts have to say about eliminating them and reintroducing them! I know a lot of people have successfully gotten past having issues with them when they heal their gut enough ๐Ÿ™‚ so hopefully you are able to do that!
