Coconut Chocolate Chip Mini Muffins

I just had the very best weekend ever.  I think the only way it could have been better is if I had been able to go down to Austin for PaleoFX with all the other paleo nerds/lovers/bloggers/etc.  BUT, spending the weekend with three of my favorite ladies in Denver was unbelievably wonderful.  I am going to write up a whole post about it because I did so many awesome things and ate a LOT of awesome food, including a trip to Shine Restaurant and Gathering Place in Boulder, which is an entirely gluten free restaurant that also offers lots of dairy free, vegan, and grain free options! The coolest. 

Know what else is the coolest? Springtime. Mainly because I need the sun in my life on the daily and it’s finally happening 🙂 I drive around a lot for my job and have a sunroof so I get all the vitamin D! I have also recently started running which I literally never in my life thought I would do. The only reason I am getting into it though is so I can run from my apartment to Lake Calhoun (one of the many beautiful lakes in Minneapolis, and one of the more than 10,000 lakes in Minnesota!) to look at all the people running, biking, and walking cutie pie dogs around the lake! The total distance is almost exactly 4 miles and I am not quite there yet but it is a goal by the end of summer to be able to run the entire length without stopping! I know I can do it, it’s just going to be less fun than yoga or kickboxing or lifting heavy things. At least its a challenge 🙂

They are AMAZING and have the perfect muffin texture. They taste even better the next day and the day after that because they get super moist (sorry for using that word). Best part? They are nut-free baby. All coconutty and magical with chocolate to boot. Plus they are small enough you can pop them right in your mouth and carry on with your day! I may have popped like 6 in my mouth immediately after they cooled from the oven. Don’t tell anyone, especially my summer-bikini-body because she would be pissed…

Coconut Chocolate Chip Mini Muffins (Grain, Gluten, Dairy, and Nut Free)

  • 2/3 c Coconut flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Fine sea salt
  • 1/4 c finely shredded Coconut
  • 1/4 c Coconut sugar
  • 6 Eggs, pastured and local if possible – room temperature
  • 1/4 c Coconut oil, melted
  • 1/4 c Ghee, melted
  • 1/4 c Raw, local honey
  • 1/3 c full fat Coconut milk
  • 1 tsp Vanilla extract
  • 1/2 c mini Chocolate chips, I like Enjoy Life brand


  1. Preheat oven to 350 degrees
  2. In a small bowl mix all dry ingredients together and set aside, if lumpy sift your coconut flour
  3. In a medium bowl beat eggs, mix in coconut oil, ghee, honey, vanilla, and coconut milk
  4. Add dry ingredients to wet and mix well
  5. Stir in mini chocolate chips
  6. Scoop batter into lightly oiled/greased mini muffin pan
  7. Fill each spot to the top with batter
  8. Bake for 10 minutes, until tops begin to brown
  9. Let muffins cool for 3-5 minutes before turning over onto a cooling rack
  10. Store in airtight container for 3-5 days in the fridge or on the counter (like I did)
  11. Enjoy!

    I made these for our plane trip and they are sooo yummy! I also wanted to let you know I stumbled on your blog when I was looking for a sweet potato recipe. I read about your Whole30 experience and was inspired to do my own. I just finished my Whole30 yesterday and have never felt better. Keep the delish and healthy recipes coming!
