Humph. My life lately = crazytown. I have royally sucked at blogging lately for two reasons: 1. crazy busy life and 2. failing miserably and/or “less than blog worthy” recipes. Hopefully with this winner my slump is OVER! Cross your fingers for me 🙂
July 3rd-6th were pretty non-paleo for me (mostly due to some alcoholic bevs) and my body is less than thrilled about the choices I made. BUT 4th of July is my favorite holiday and it only happens once a year so I chose to indulge. Plus I got to spend time with all my faves, even my bestie who lives in Iowa City! I drove down and got to experience two nights of Jazz Fest and some of the best fireworks I have ever seen. And that’s saying a LOT because fireworks are my addiction. I almost got a firework tattoo a couple years ago but unfortunately they don’t make metallic ink. (if someone comes up with a way to do this please call me first)
By the way, how is it already July 11th? What the? This summer is going way too fast and I have only been on the lake like 3 times which is pretty unacceptable due to the fact that I live in the Land of 10,000 Lakes and I know people who have access to boats, floaties, jet-skis, etc. Operate remedy this lake-less situation begins this weekend! I am SUPER HAPPY though, want to know why? My best friend and leetle seester Sarah got back from 5 months in Austria and I am head over heels happy about it. Missed that girl monstrously and can’t wait to spend the rest of the summer living in the same house again. Haven’t done that since… 2007? Did I mention I am moving back in with my parents temporarily? Yeah.. feels weird because I am 25 but I am also excited because that means I get to cook 100% paleo food for them and get them on the paleo bandwagon, YAY!
Any of you going to a potluck or barbecue anytime soon? I have a Welcome Home Sarah party on Saturday and will be bringing this yummy salad with me! It only has 5 ingredients (plus salt and peppa) and is really quick to throw together. Plus its yummy and not like your normal Broccoli Salad that you can pick up at the grocery store. Just a recommendation, use milder radishes if you don’t want it “spicy”, mine were little tiny, mild ones from my CSA share this week (so was the broccoli!) and it turned out perfect.

Creamy Broccoli Radish Salad
- 5-6 small Radishes (mild if possible)
- 1 head of Broccoli
- heaping 1/3c Homemade Mayo (search my site for recipe!)
- 1/4 c Pepitas
- 1/4 c Raisins
- S&P to taste
- Halve and slice radishes and add to medium bowl
- Remove large stem from broccoli and cut into bite-sized pieces including some of the smaller stems, add to bowl
- Add mayo and stir to evenly coat
- Add pepitas and raisins and mix thoroughly
- Salt and pepper to taste
- Serve cold at any potluck or barbecue as a side dish!
