Last night for dinner I made the MOST delicous roasted brussels sprouts, which I will share with you this evening!  I had a few leftover this morning so I scrambled them with some sun-dried tomatoes and eggs.  Top it off with Frank’s, obvs.

I have been missing cereal lately since it used to make up a pretty significant amount of my diet.  I decided to make some of my own this morning! It totally satisfied and was healthy!  I knew every ingredient in the entire bowl which you can rarely say about boxed cereals!  Click through for recipe; enjoy!

Missing Cereal and Loving Sprouts

Ingredients:

  • 2 tbsp sliced almonds
  • 1 tbsp sunflower seeds
  • 1 tbsp chopped (or crushed) cashews
  • 1 tbsp chopped walnuts
  • 1 tbsp coconut flakes
  • 1 tbsp raisins
  • 1/4 c coconut milk, refrigerated so it is thicker
  • dash cinnamon

Directions:

  1. Place all the ingredients through coconut flakes in a bowl and mix.  Pour coconut milk over the top.  Finish with raisins and a sprinkle of cinnamon.  Dig in!
