Quick Recipe – Mexi-Eggs

Thought I would share my breakfast this morning, because it was FANTASTIC.  And easy, we like easy.

Quick Recipe – Mexi-Eggs

  • Yield: 1 hungry lady
  • Difficulty: easy

Ingredients:

  • 2 eggs
  • 10 grape tomatoes
  • 2 slices proscuitto
  • 1 tbsp coconut oil
  • dash of cumin
  • dash of chili powder
  • dash of red pepper flakes
  • salt and pepper to taste
  • 2 tbsp salsa of choice
  • 1/2 avocado

Directions:

  1. Heat coconut oil in a frying pan and swirl to coat.

  2. Slice tomatoes and fry on both sides for about 1-2 minutes

  3. Tear proscuitto and add to tomatoes and heat for 30 seconds

  4. Break eggs into pan and season with spices, salt and pepper

  5. Scramble until eggs are cooked to your liking

  6. Top with salsa and cubed avocado (don’t forget to salt your avocado, its the BEST)

  7. Enjoy with a side of sweet potato and/or fruit!
